 A simple recipe for homemade marshmallows

Ingredients  

3 tablespoons unflavored gelatin

1 cup cold water, divided

1 1/2 cups granulated sugar

1 cup light corn syrup

1/4 teaspoon salt

2 teaspoons vanilla extract

1/2 cup powdered sugar

1/2 cup cornstarch

Instructions

Prepare the Pan

Lightly grease a 9x13-inch baking pan and dust it with a mixture of powdered sugar and cornstarch . This will keep the marshmallows from staying .Bloom the Gelatin:

In a small bowl, combine the gelatin with 1/2 cup of cold water. Stir it together and let it sit for about 10 minutes to bloom.

Make the Marshmallow Syrup

In a medium pot, join the granulated sugar, corn syrup, salt, and the leftover 1/2 cup of cold water. Heat the combination over medium intensity, mixing continually until the sugar breaks down..

Cook the Syrup

Once the sugar has dissolved, increase the heat to high and let the mixture come to a boil. Insert a candy thermometer into the syrup and continue cooking until it reaches 240°F (115°C). This usually takes about 10-15 minutes.

Combine the Gelatin and Syrup       

Slowly pour the hot syrup into the bowl with the bloomed gelatin, while whisking continuously . Be cautious as the blend will be very hot. Whip the Marshmallow Mixture:

Using a stand mixer or handheld mixer, beat the mixture on high speed for about 10-15 minutes until it becomes thick, fluffy, and triples in volume. Add the vanilla extract during the last minute of mixing. 

Pour and Set the Marshmallow 

pour the   marshmallow mixture into the prepared baking pan, spreading it evenly with a spatula .Allow it to sit at room temperature for no less than 4 hours or short-term to set. Cut and Coat the Marshmallows:

Consolidate the powdered sugar and cornstarch in a bowl.. Dust a clean surface with some of the mixture and invert the set marshmallow slab onto it. Dust the top of the marshmallows with more of the powdered sugar and cornstarch mixture.

.Utilizing a sharp blade or a cutout, cut the marshmallows into wanted shapes and sizes.. Toss each piece in the powdered sugar and cornstarch mixture to prevent them from sticking together.

Store the marshmallows in a sealed shut compartment at room temperature for as long as about fourteen days .They are perfect for toasting over a campfire, using in hot chocolate, or enjoying on their own!

Note: You can also customize the flavor and color of your marshmallows by adding extracts, food coloring, or other flavorings during the whipping process.
