Ingredients

For the Gulab Jamun Dough

1 cup milk powder

1/4 cup all-purpose flour (maida)

1/4 teaspoon baking soda

2 tablespoons ghee (clarified butter)

A pinch of cardamom powder (optional)

2-3 tablespoons milk (for kneading)

For the Sugar Syrup

1 cup sugar

1 cup water

1/2 teaspoon cardamom powder

A few saffron strands (optional)

1 teaspoon rose water or a couple of drops of rose pith

For Frying

Vegetable oil or ghee for deep frying

                                                 

Instructions

Preparing the Sugar Syrup

In a saucepan, combine the sugar and water Heat it to the point of boiling over medium intensity.

Once the sugar dissolves completely, reduce the heat and let the syrup simmer for about 5-7 minutes until it thickens slightly. Add the cardamom powder and saffron strands (if utilizing).. Stir well.

Remove the syrup from the heat, and then add rose water or rose essence. Stir again, and set the syrup aside. It should be warm when you soak the Gulab Jamun.

                                

Making the Gulab Jamun Dough

In a blending bowl, consolidate the milk powder, regular flour, and baking pop.

Add ghee to the dry trimmings and mix well.a.The mixture should resemble breadcrumbs.

Gradually add milk, a tablespoon at a time, and knead the mixture into a soft and smooth dough. Be careful not to over-knead; just knead until everything comes together.

Shaping and Frying the Gulab Jamun

Heat vegetable oil or ghee in a deep, heavy-bottomed pan over medium-low heat. The oil should be moderately hot, not too hot, or the Gulab Jamun will cook quickly on the outside but remain uncooked inside.

While the oil is heating, divide the dough into small, evenly sized portions and roll them between your palms to make smooth, crack-free balls Ensure there are no breaks on a superficial level.

Gently slide the prepared Gulab Jamun balls into the hot oil one by one. Do not overcrowd the pan; fry them in batches if necessary. Keep the heat on medium-low to ensure even cooking.

Fry the Gulab Jamun, stirring occasionally, until they turn golden brown all over. This should take about 5-8 minutes per batch. Be patient and sear them gradually to guarantee they cook through..

Once the Gulab Jamun are golden brown, use a slotted spoon to remove them from the oil and drain excess oil by placing them on a paper towel.

Soaking the Gulab Jamun

While the Gulab Jamun are still hot, gently place them into the warm sugar syrup. Ensure that the syrup covers the Gulab Jamun completely.

Let the Gulab Jamun soak in the sugar syrup for at least 2-3 hours or until they become soft, spongy, and absorb the syrup.
Serving
