1 cup granulated sugar

6 tablespoons unsalted butter, cut into pieces

1/2 cup heavy cream

1 teaspoon pure vanilla extract

Pinch of salt (optional)    

Instructions  

Place the granulated sugar in a weighty lined pot over medium intensity.. Let it melt without stirring. The sugar will gradually start to liquefy and turn into a deep amber color. Swirl the pan gently if needed to ensure even caramelization.

Once the sugar is melted and amber in color, add the butter one piece at a time. . Be mindful, as the blend would bubble vivaciously.

Remove the saucepan from heat and slowly pour in the heavy cream while stirring constantly. The mixture will bubble again, so exercise caution.

Return the saucepan to low heat and continue stirring until the caramel is smooth and well combined. If desired, add a pinch of salt for a salted caramel variation.
